閉経後の女性において、6か月間大豆、非大豆の植物性タンパクをタンパク源として多く摂取すると、動物性タンパク、乳製品摂取と比較して血清のTC、LDL-Cがより低下した。空腹時血糖値、IRI、HOMA-IRに差はなかった。植物性タンパクに含まれる食物繊維や不飽和脂肪酸、また、大豆に含まれるイソフラボンによるコレステロール低下作用が示唆される。
