Discussion：
米国の 50 歳以上の閉経女性において、揚げ物の摂取頻度・量の増加による全死亡のリスク上昇があった。その中でもフライドチキン、揚げた魚介類の摂取頻度・量の増加による全死亡、心血管死のリスク上昇があった。
揚げ物と癌死の関連は指摘できなかった。
